Johnsonville Dr Pepper® Sausage Pretzel Bites

These pretzel bites are the kind of snack that disappears fast. Little pieces of Johnsonville Dr Pepper® sausage get wrapped in pizza dough, then are boiled for that classic chewy pretzel finish and baked until deeply golden. They’re paired with an easy Dr Pepper–mustard dipping sauce that’s slightly sweet and tangy without being over the top.

Preparation

  1. Make the pretzel bites: Divide the pizza dough evenly into 12 pieces. Roll the dough on an unfloured work surface into 2-inch-long logs. Working with 1 Johnsonville Dr Pepper® sausage round at a time, place a sausage round on one end of a dough log, and roll it up from end to end. Roll it back and forth until the dough seam has disappeared. Place the rolled pretzel bites on a plate or baking sheet, and freeze, uncovered, for 1 hour.
  2. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper, and set aside.
  3. Place the water and baking soda in a large pot. Bring to a boil over high heat. Remove the pretzel bites from the freezer. Working with 3 pretzel bites at a time, drop the bites into the boiling water. Boil for about 1 minute, or until they float to the top. Remove with a slotted spoon or a spider, and place on the prepared baking sheet.
  4. Whisk together the egg and milk in a small bowl. Brush evenly over the pretzel bites. Sprinkle the tops with sea salt to taste. Bake for about 20 minutes, or until the pretzel bites are a deep golden brown.
  5. Meanwhile, make the Dr Pepper® mustard dipping sauce: Place the Dr Pepper® in a small saucepan, and bring to a simmer over medium heat. Simmer, stirring occasionally, until the liquid reaches a syrupy consistency, about 10 minutes. Remove from heat. Whisk together the Dr Pepper® reduction, mustard, mayonnaise, and kosher salt in a medium bowl.
  6. Remove the pretzel bites from the oven. Serve with dipping sauce.
  7. Enjoy!
