Ingredients

for 8 servings

  • 1.5 cups graham cracker crumbs
  • 6 tablespoons melted unsalted butter
  • 2 tablespoons granulated sugar
  • Pinch of kosher salt, optional
  • large egg yolk
  • 1 (14-ounce) can sweetened condensed milk
  • 1 tablespoon key lime zest
  • ½ cup key lime juice, about 18-20 limes
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Preparation

  1. Preheat the oven to 350°F (180°C).
  2. Stir together the graham cracker crumbs, butter, granulated sugar, and salt in a medium bowl. Press firmly into a 9-inch metal pie dish, covering the bottom and sides evenly.
  3. Bake for 8–10 minutes, until the crust is light golden. Remove from the oven, and let cool, 30–45 minutes. (Do not turn the oven off.)
  4. Whisk together the egg yolks in a separate bowl for 1–2 minutes, until slightly thickened and pale. Slowly whisk in the sweetened condensed milk until smooth. Add the Key lime zest and juice, whisking together until fully combined and slightly thickened.
  5. Pour the filling into the cooled crust. Bake at 350°F for 12–15 minutes, until set but still slightly jiggly in the center. Remove from the oven, and let cool to room temperature, 45–60 minutes. Transfer to the refrigerator, and chill until fully cold, 3–4 hours, covering after the first 2 hours.
  6. Using a hand or stand mixer fitted with the whisk attachment, beat the heavy cream, powdered sugar, and vanilla on medium speed until soft peaks form, 2–4 minutes.
  7. Top the chilled pie with the whipped cream and extra key lime zest. Slice and serve.
