Birthday Viral Japanese Cheesecake

This viral Japanese cheesecake–inspired dessert is an easy no-bake treat made with Greek yogurt, sprinkle cookies, and maple syrup. As the cookies chill in the yogurt, they soften into a cake-like texture that mimics the light, fluffy feel of Japanese cheesecake. Finished with rainbow sprinkles, this playful “birthday edition” version is an easy, single-bowl dessert that’s ready after a short chill in the fridge.

Preparation

  1. Pour the yogurt into an 8-ounce shallow bowl. Stir in the sprinkles, maple syrup, and vanilla. Smooth the yogurt mixture evenly in the bowl. Place the cookies vertically in the yogurt mixture, pushing each cookie in until mostly submerged in the mixture.
  2. Top with more sprinkles to taste. Cover the bowl with a lid or aluminum foil, and refrigerate until the cookies soften and the yogurt thickens, at least 1 hour or up to 12 hours. Serve.
  3. Enjoy!
